Basic Honey Loaf

...and a few variations on the theme!

400g flour (wholemeal, 50/50 wholemeal and white, or 50/50 wholemeal wheat and rye)
4 heaped teaspoons baking powder
200g honey
0.25 ltrs (1 mug) milk

Warm milk with honey until honey dissolves and let cool.

Mix dry ingredients, stir in milk/honey mix, fill into greased loaf tin and bake at medium heat for about one hour (check with knitting needle that it's done). Best eaten with unsalted butter.

You can add (at the dry mix stage): a handful of dried fruit (raisins, sultanas, chopped dates...); mixed peel; chopped crystalised ginger; one or two teaspoons of mixed spice, cinnamon, aniseed, or ginger; or one or two tablespoons of cocoa.
